Affogato

Affogato is Italian for ‘drowned’. A scoop of cold vanilla gelato, a shot of hot espresso poured over the top, and the name describes the gelato’s fate.

African Food

Injera, Ethiopia’s spongy sourdough flatbread, ferments up to three days. At an Ethiopian meal it serves as both plate and utensil.

Afternoon Tea

Clotted cream is cream slow-heated for 12 hours until a thick golden crust forms. “Cornish” is reserved for cream slow-heated in Cornwall only.

The sneeze guard was patented in 1959 by Johnny Garneau, a germophobe restaurateur tired of watching diners hover nose-first over his smorgasbord. US food code now requires one over every buffet.

Anthony Bourdain

In 2016, Anthony Bourdain shared grilled pork, noodles, and cold beer with President Obama in Hanoi, the two of them folded onto low plastic stools at a $6 dinner he picked and paid for.

Appetizing

In New York, “appetizing” is a noun. It names the shop that sells what goes on a bagel, lox and whitefish and a schmear, but never meat. Kosher law keeps meat and dairy apart, so the deli and the appetizing counter kept separate shops.

Beantown Dessert

Dunkin’s Boston Kreme donut riffs on Boston cream pie, which is not a pie but a cake. Massachusetts named it the official state dessert in 1996, born at Boston’s Parker House Hotel in 1856.

Big Dill

A “kosher dill” pickle has nothing to do with religious kosher rules. The name refers to the garlicky, salty brine of old New York Jewish delis, where cucumbers were cured in barrels with plenty of garlic and dill.

Big Easy

In 1929, the po’boy was born when New Orleans brothers Benny and Clovis Martin fed striking streetcar workers free sandwiches. The brothers greeted each worker: “Here comes another poor boy”.

Birria Tacos

Birria began as a goat stew from Mexico’s Jalisco region, born of Spanish-era necessity. Tijuana cooks switched to beef, dipped the tortilla in consomé, and went viral in early 2020.

Bizarre Foods

Chef Anthony Bourdain likened durian’s smell to “French-kissing your dead grandmother”. Singapore’s MRT bans the fruit from every train and station.

Brunch

In 1993, Australian chef Bill Granger put avocado toast on his Sydney café menu after watching diners combine his smashed-avocado side with toasted bread slices.

Bubble Tea

Two Taiwanese teahouses each claimed to invent bubble tea in the 1980s and fought over it for nearly a decade. A court ruled nobody can patent a drink. The chewy pearls are tapioca, from cassava root.

Burger King

“Whopper” was 18th-century slang for “anything huge” when Burger King co-founder James McLamore picked it as his burger’s name in 1957.

Candy Floss

In 1897, Nashville dentist William Morrison invented cotton candy. Seven years later, rebranded “Fairy Floss”, it sold 68,655 boxes at 25 cents each at the St. Louis World’s Fair.

Caviar Bumps

It takes a beluga sturgeon 20 years to mature for harvest. That’s why a tin of beluga caviar can cost more than a used car, and why the US banned its import in 2005.

Cereal Mascots

Snap, Crackle and Pop are named after a sound you can actually hear. Kellogg’s gave the Rice Krispies elves those names in the 1930s, for the noise the cereal makes when milk hits it.

Chicago Deep Dish

Lou Malnati Sr. co-managed Pizzeria Uno with his father Rudy in the 1950s, then opened his own deep-dish chain in Lincolnwood in 1971.

Chicken and Waffles

In 1975, Harlem native Herb Hudson founded L.A. soul food chain Roscoe’s, transplanting the Harlem chicken-and-waffles tradition out to the coast.

Churros

In Madrid, churros con chocolate is a dawn ritual, eaten after a long night out. The Chocolatería San Ginés has fried them around the clock for over a century, the chocolate thick enough to stand a spoon in.

Cooking The Books

Widowed Irma Rombauer self-published *The Joy of Cooking* in 1931 through a St. Louis printer best known for Listerine labels.

Cortado

A Gibraltar is a 4.5oz Libbey tumbler. Blue Bottle Coffee ordered a batch by mistake in 2005, poured cortados into them, and the name stuck.

Creme Brulee

England, France, and Spain all claim the burnt-sugar custard. The English call it Trinity cream, the Catalans crema catalana, the French crème brûlée, the version whose name stuck.

Croissant Cookie

A Paris baker stuffed a croissant with cookie dough, rebaked it, and called it the Crookie. After it blew up on TikTok in 2023, his bakery went from about 150 a day to more than 1,500.

Cronut

Pastry chef Dominique Ansel spent two months and ten recipes perfecting the Cronut before debuting it in May 2013. Only 300 are made each day.

Cucumber Salad

In 2024, Canadian creator Logan Moffitt sliced whole cucumbers into a container, shook them with sesame oil and soy, and pulled tens of millions of views. Iceland’s cucumber sales jumped over 200% and shops ran dry.

Daily Grind

In 1948, Milan barista Achille Gaggia posted “Crema caffè naturale” in bar windows, turning an accidental foam into the mark of a quality espresso shot.

Deli Meats

American bologna descends from mortadella, Bologna’s lard-studded pork sausage, simplified when Italian immigrants crossed the Atlantic in waves.

Diwali

Jalebi, the crisp, orange, syrup-soaked spirals, comes from the Arabic “zulabiya”. Its earliest recipe appears in a 10th-century cookbook.

Dragged Through The Garden

The Chicago dog carries a whole garden: yellow mustard, neon-green relish, onion, tomato, a pickle spear, sport peppers and celery salt on a poppyseed bun. One rule is sacred. Never ketchup.

El Bulli

Catalan chef Ferran Adrià received 2 million reservation requests a season for 8,000 seats at El Bulli. The world’s hardest table.

Eleven Madison Park

Chef Daniel Humm earned his first Michelin star at 24 in Switzerland, then made Eleven Madison Park the first plant-based restaurant to hold three Michelin stars.

Fortune Cookies

When 110 players hit the same Powerball prize in March 2005, lottery officials suspected fraud. Every winner had played the lucky numbers from one fortune cookie factory. Payouts topped $19 million.

Fried Chicken

The KFC bucket debuted in 1957. Franchisee Pete Harman charged $3.50 for 14 pieces, five rolls, and a pint of gravy.

Garfield's Favorite

Garfield has loved lasagna since his comic strip debuted in 1978. The lazy cat now runs in thousands of newspapers, holding the Guinness record as the world’s most widely syndicated comic strip.

Goulash

Goulash takes its name from the Hungarian *gulyás*, the cattle herdsmen who simmered the stew over open fires on the plains. The paprika that defines it now arrived from the New World long after Hungarians first cooked it.

Grant Achatz

At Alinea in Chicago, chef Grant Achatz serves a balloon you eat. It’s made of green-apple taffy inflated with helium, string and all. Diners breathe in the helium for a squeaky voice, then swallow the evidence.

Grilled Cheese Sandwich

“Grilled cheese” didn’t appear in print until the 1960s, when the sandwich finally shed its earlier names, “toasted cheese” and “melted cheese”.

Half Baked

Ben and Jerry learned to make ice cream from a $5 correspondence course, then opened their first shop in 1978 inside a renovated gas station in Burlington, Vermont.

Hot Mess

A Louisiana crawfish boil is built to be a hot mess. Pounds of spiced crawfish and shrimp dumped onto newspaper, no plates, no forks. You crack the claws, then follow the local rule: pinch the tail and suck the head.

In-N-Out

In-N-Out’s Animal Style, named for rowdy 1961 regulars, is a mustard-grilled patty with grilled onions, pickles, and extra spread.

Ina Garten

In 1978, Ina Garten was 30, working at the White House Office of Management and Budget on nuclear-policy budgets. She quit, bought a Hamptons food store for $20,000, and learned to cook on the job.

Jamon Iberico

Spain’s autumn *montanera* fattens a Joselito Ibérico pig on up to 12 kg of bellota acorns daily for three months. Then 48 months of curing.

Jollof Wars

Ghana and Nigeria have feuded for years over whose party jollof rice reigns. In 2014 British chef Jamie Oliver added cherry tomatoes and parsley to his version, and briefly united both nations in shared outrage.

Kaiseki

Kikunoi takes its name from a chrysanthemum-shaped spring well from the 1500s. The restaurant, founded in 1912, still draws from it.

Kentucky Hug

A Kentucky hug is the warm glow bourbon leaves in your chest going down. The whiskey earns it in the barrel. By law, American bourbon must age in new oak charred until the inside is black.

Khachapuri

Khachapuri is the cheese bread of Georgia, the Caucasus nation. Its Adjaruli version, from the Black Sea coast, comes shaped like a boat. Molten cheese with a raw egg yolk dropped in like a sun. You stir, tear off the prow, and dip.

Korean Corn Dog

The Korean corn dog often swaps the hot dog for a core of mozzarella, coats it in panko or diced potato, deep-fries it, then dusts the whole thing in sugar. The stretchy cheese pull made it a viral US street-food hit around 2021.

Liquid Gold

The peppery burn a good olive oil leaves at the back of your throat comes from oleocanthal. It bites like ibuprofen, and studies found it works on the body like a mild dose of the same painkiller.

Lunar New Year

Lunar New Year foods encode wishes. Jiaozi resemble gold ingots for wealth, niangao puns on “higher year”, tangyuan rhymes with family ties at the table.

Mac and Cheese

Thomas Jefferson fell for pasta while traveling in Europe and shipped a macaroni machine home to Virginia. In 1802 he served a baked “macaroni pie” at a White House dinner, helping put mac and cheese on the American table.

Michelin Stars

Michelin started as a tire company. Its 1900 road guide, designed to sell more tires, became the world’s top restaurant rating.

Mise en Place

Mise en place is French for “everything in its place”. The brigade kitchen behind it borrowed its rank structure from the French army.

Molecular Gastronomy

Molecular gastronomy treats cooking as chemistry, turning olives into liquid spheres that burst at the first touch of the tongue tip.

Mother Sauce

In 1903, Escoffier’s *Le Guide Culinaire* codified five French mother sauces: Béchamel, Velouté, Espagnole, Tomate, and Hollandaise.

Nashville Hot Chicken

Thornton Prince’s girlfriend buried his fried chicken in cayenne as revenge for a late night out. He loved it. Prince’s Hot Chicken Shack followed.

New Coke

In 1985, Coca-Cola changed its century-old formula. The backlash was so fierce the company brought the original back in 79 days as Coca-Cola Classic. The new version quietly died.

Noma

Noma was named the world’s best restaurant five times before chef René Redzepi closed it in 2024, turning it into a food research lab.

Nuts

Pecan comes from the Algonquian “pacane”. A nut that needs a stone to crack. Cashew came via Portuguese from the Tupi “acajú”.

NY Slice

In 1905, Lombardi’s opened on Spring Street in New York. They baked coal-fired pies for Little Italy factory workers. It’s recognized as the first pizzeria in the United States.

On The Rocks

Aperol and Campari are owned by the same Italian company. Campari Group bought Aperol in 2003 for €150 million when it earned just €30 million a year.

Pad Thai

Thailand’s national dish began as a government campaign. In 1942, with rice scarce, Prime Minister Plaek Phibunsongkhram promoted pad thai through free noodle carts and a standard recipe. And it worked.

Paella

The original from Valencia carries rabbit and snails, not seafood. Cooks prize the socarrat, the layer of rice toasted crisp and caramelized against the hot bottom of the pan.

Pandemic Sourdough

In 2020, baker Chad Robertson’s *Tartine Bread* became the lockdown sourdough bible. His San Francisco loaves still surface once daily, after 4 p.m.

Peking Duck

Peking duck chefs pump air beneath the skin, then glaze and hang the bird for hours so it roasts to a brittle, glassy crackle, the lacquered skin carved tableside and served before the meat.

Philly Cheesesteak

The cheesesteak started in 1930 as just steak. A Philadelphia hot dog vendor named Pat Olivieri grilled beef on a roll with no cheese at all. Cheez Whiz, now the classic topping, didn’t exist until 1952.

Pizza Napoletana

The bufala mozzarella on Neapolitan pizza comes from water buffalo originally from India, brought to southern Italy by Norman conquerors around 1000 AD.

Pop-Tarts

Kellogg’s rushed Pop-Tarts onto shelves in 1964 to beat a rival from Post, so the first ones shipped bare. Engineers feared frosting would melt in the toaster. It held fine, and the frosted, sprinkled versions arrived in 1967.

Ramen

Tonkotsu’s milky broth was an accident. In 1947, a Kurume shop owner left pork bones boiling too long and found the cloudy result tasted better.

Ratatouille

Chef Thomas Keller consulted on the Pixar film *Ratatouille*, letting producer Brad Lewis intern two days at The French Laundry. The signature dish is his own confit byaldi.

Rendang

Readers of CNN’s “World’s 50 Best Foods” voted rendang number one, twice. The West Sumatran beef dish simmers in coconut milk and spice for hours until bone dry, so it keeps for weeks on a shelf.

Rooster Sauce

David Tran fled Vietnam in 1979 aboard a freighter named the Huey Fong, then built a hot-sauce empire and named it after the boat. The rooster on every sriracha bottle is his Chinese zodiac sign. For decades he never raised the price.

Schnitzel

In Austria the name Wiener schnitzel is protected by law. Call it that and it must be veal, pounded thin and fried in breadcrumbs. Pork earns only the label Schnitzel Wiener Art, Viennese style.

Slow Burn

In 2023, Pepper X, bred by South Carolina’s Ed Currie, dethroned his own Carolina Reaper, registering 2.69 million Scoville units. That’s roughly three times hotter than the Carolina Reaper.

Slow Food

In 1986, Italian journalist Carlo Petrini greeted Rome’s first McDonald’s with bowls of penne. That act of defiance launched the Slow Food movement worldwide.

Soul Food

On Southern New Year’s tables, black-eyed peas represent coins, collard greens paper money, and cornbread the gold.

South Indian

Dosa batter ferments overnight from rice and urad dal lentils, then spreads paper-thin on a hot griddle into a crisp, hollow crepe.

Southern Comfort

Sawmill gravy got its name from 1880s Appalachian logging crews. They stirred pork drippings and milk into flour, the texture matching the sawdust on the floor.

Stinky Cheese

Burgundy’s Époisses gets its orange rind and barnyard reek from weekly washes in Marc de Bourgogne, a grape brandy. The cheese died out after the Second World War, until a farming couple revived it in 1956.

Sweet Heat

Hot honey reached American pizza through one traveler. Mike Kurtz tasted chili-spiked honey at a Brazilian pizzeria in 2003, made his own, and by 2010 was bottling it at a Brooklyn pizza shop.

Tanghulu

According to legend, a Song-dynasty doctor cured a sick royal concubine with hawthorns boiled in rock sugar. Centuries later, the candied-fruit skewer tanghulu went viral on TikTok for the crack of its glassy shell.

Tapas

*Gambas* means shrimp, *jamón* means cured ham. Spain’s prized jamón ibérico ages three years minimum, from acorn-fed Iberian pigs only.

The Beverly Hills Hotel

Neil McCarthy was a Hollywood film attorney and polo captain. His custom chopped salad has stayed on the Polo Lounge menu since the late 1940s.

The Last Word

In 1916, the gin cocktail Last Word debuted at the Detroit Athletic Club at 35 cents, then vanished until 2003, when a Seattle bartender revived it.

The Lazy Susan

Nobody knows who Susan was. The rotating tray took the name by the early 1900s, and the story that Thomas Jefferson invented it for his daughter is a myth.

The Original Beef

Chicago’s Italian beef came from 1920s “peanut weddings”, where hosts fed crowds by slicing one roast paper-thin and dunking it in pan gravy.

The Pour Over

That fizzing rise when hot water first hits coffee grounds, the bloom, is carbon dioxide escaping from beans roasted only days earlier. The paper filter beneath it was invented in 1908 by a Dresden housewife, Melitta Bentz.

The Reuben

Two cities still fight over who built it first. Omaha credits a grocer improvising at a 1920s hotel poker game. New York credits a deli owner named Reuben. Neither side has ever proved it.

The Secret Menu

In-N-Out's secret menu is so famous the chain gave up and published it. The official website lists Animal Style and the rest under a section it calls the not-so-secret menu.

The Tip Screen

In 2023, Pew Research measured the awkwardness. 72% of Americans said tipping was expected in more places than five years before. Only 24% favored screens that suggest how much.

The Whole Hog

In 1947, pitmaster Pete Jones opened Skylight Inn in Ayden, North Carolina at age seventeen. He cooked whole hog over hickory and oak, finishing with vinegar and hot sauce only.

Toad in the Hole

Toad in the Hole holds no toad. The British dish bakes sausages in Yorkshire pudding batter, the links poking up like toads from a pond. Early versions used whatever cheap meat a cook had on hand.

Turkish Delight

*Dolma* is Turkish for “stuffed”. Grape leaves or vegetables filled with rice and herbs. Istanbul had 50 dolma cookshops by the year 1700.

Uji Green Tea

Matcha is the rare tea you drink whole. The leaves are shade-grown near Uji, in Japan, then stone-ground so slowly it can take an hour to yield 30 grams of powder. A forked bamboo whisk called a chasen brings it to a froth.

Wagyu A5

Real Kobe beef comes from Tajima cattle, a single Japanese strain raised in the Hyōgo region. Only about 3,000 head qualify each year.

Where's The Beef

Chicago manicurist Clara Peller was 81 when Wendy’s cast her in the 1984 ad. They fired her the next year over a Prego spot.

Whipped Coffee

A South Korean actor tried hand-whipped coffee in Macau on a January 2020 TV show and said it tasted like dalgona, a Korean honeycomb candy. Weeks later it became lockdown TikTok’s signature drink.

Worth Its Salt

The word salary traces back to salt. Roman soldiers received a “salarium”, an allowance tied to it, and the same root gives us the phrase “worth your salt”.
